Before frying, how should fries be stored?

Potatoes should be kept in a dark, cold (between 45 and 55 degrees Fahrenheit), environment when they are being stored. Some of the starch in potatoes may be converted into sugars if the temperature is kept below 40 degrees Fahrenheit. If you fried these potatoes, the increased sugar content will cause them to brown too quickly, far before they are fully cooked in the middle.
